B-2868 is a Boeing 757-25C, MSN 32941 (line number 993), delivered to Xiamen Airlines on 11 December 2001. It served the carrier's network for seventeen years before being placed in storage in December 2018 when Xiamen Airlines retired its 757 fleet. The aircraft later re-emerged as a freighter with North-Western Cargo following a conversion completed in 2022–2023. Notably, B-2868 carried out what is recorded as the last revenue passenger flight for Xiamen Airlines' Boeing 757 operation, flight MF8512. The model replicates Xiamen Airlines' classic blue-and-white identity. The upper fuselage is white; a solid bright-blue cheatline runs from nose to tail, bordered above by a thin lighter-blue stripe. The vertical stabilizer is entirely bright blue with a stylized white crane/egret logo. Chinese characters reading "厦门航空" appear in blue on the forward fuselage alongside the "XIAMENAIR" title. A matching blue bird emblem is applied at the nose below the cockpit windows. The wings terminate in classic blunt tips—no winglets—accurately reflecting the 757-200 factory configuration of MSN 32941.
